Default call channel --- what exactly is it?

Hello,
From the nature of the question you can probably guess that I am new to ham
radio.

What is a "call channel"? The instruction manual for my 2M/70cm portable
transceiver mentions being able to set up a call channel, but it does not
define what that is. Can someone tell me what it is and what it is good
for?
