I have heard there are some tubes that use plate caps that are basically the
same as a 6L6.
The only readon I want to use something like this is because of the design
of the output transformer
I have. The B+ connection is on the bottom, underside of the chassis, and
the plate connection is on the top.

Or, if it needs to be smaller than an 807 and you can find it, a 5B/254M

Basically the same as in beam tetrodes in the same power class, yes.
There are tons of them; one good way to figure it out is to get your
hands on an ARRL handbook of the appropriate vintage and go shopping
among the transmitting and horizontal sweep tubes for ones that look likely.

I think you're looking for a 6BG6.

Yes, because the 807 is literally the 6L6 in a different 'package'.

(The 5B254/M was made in Britain as a so-called "miniature 807", but it
must be extremely rare in the USA.)

Thanks all, an 807 would be great. They are tall enough to be almost even
with the top of the transformer.

A 1625 is an 807 with a 12 volt filament, if that's the filament voltage
that you have.
