Capturing numbers & snooping phones.

Is it possible, like with new phones (i.e. 3G, and the other normal
ones) to capture somebodys mobile phone number while they're calling
somebody? Or perhaps listen in on their conversation?

I'm not sure whether it is possible due to digital encoding right? Can
someone offer some insights?

The Mobile phone jammers got me thinking of the possibilities.
