My fun these days is in finding ways to make meaningful measurements 120dB below full scale with data from a 12-bit or 14-bit ADC. :-) Yeah, g'luck with that... Works well if the ADC is linear enough and you have enough processing gain. Maybe some day not too far down the road we'll have 20 bit and 24 bit 100Ms/s ADCs, but they're a bit rare right now.
