VFO -- Variable Frequency Oscillator.
Easy explanation -- like the tuning dial on a basic Am or FM radio. When you are in the VFO mode, the main tuning dial is rotated to the desired frequency or to tune in a station. Old style VFO's were continuous tuning. Analog New Digital types like your R75 -- are in selectable discrete steps i.e., from as low as 1 Hertz -- up to 100 kHz see -- page 12 and 13 of the ICOM Manual.
