God could really have impressed us if He had told Moses
to write: "In the beginning, God created the Big Bang."
Assuming that God knew He had created the Big Bang,
why didn't He tell Moses to write those words?

Because then he would have had to explain himself.

Have you actually read the anguish of Moses trying to keep those people
together just so they could have a future? Clearly God stimulates their
anticipation of the future but doesn't give any more detail than what is
necessary. Clearly more information is given than what they understand
until the event comes to pass. It becomes clear (although some seem to
embellish) that God intends to lead them forward with His complete timeline
knowledge.
