What are you planning BBQ'ing/ Smoking for your Christmas dinner?

Someone at work gave me a Canadian goose that I plan on cold
smoking and then baking. Want some goose grease? :-)

Cold smoke is where you generate smoke without much heat. It
doesn't cook the food just smoke it. Great for making home made
bacon. The one I use is a smoke pistol.
I just mounted it on the side of my brinkman smoker.

It generates smoke for 2 or 3 hours..

And Cherry is the best, esp for Turkey or Chicken..

If I hot smoke a turkey, which is heat with smoke, a turkey can take 8
to 9 hours. My smoker runs about 250 degrees, with a water bath under
it. If I cold smoke it, you still have to bake it in an oven for the
same amount of time as a regular turky. The only problem I have with
cold weather is the output of my smoke pistol plugging up with
condensed smoke.

Smells good just posting about it. I have not given smoking a try yet. Most of
the stuff I have eaten that has been smoked, has been at someone elses house.
But those smoke/BBQ restaurants are gold in my book.

LMAO!!! It been at least 10 years since I hunted Goose. You got
that right on the grease part, damn greasy, but save that stuff. It's much
better to use than cooking oils.
Sorry to say but doing a 22lb deep fried. Got the propane tank
filled, fired everything up, we're ready to rock. Going to brine it
in with salt, brown sugar, onion, sliced orange, bourbon.
Got my home made sourdough stuffing and Yukon gold smashed
potatoes, rest is being brought by the family.

Have a great Christmas!!!!!!!!!!
