Another question would be...

what exactly is the Motorola radio set that the coach wears used for (other
than for advertising Motorola)?

The quarterback has radio contact with the coach? On a 100 yard football
field?
Figure that the quarterback has better things on his mind than saying into a
radio in a learned communications tone..

"Roger. In position to advance one zero yards downrange.
Initiating offensive sequence delta two. Acknowledge time remaining is zero
one four six. Downs one."

I can see radio contact with Nascar races, but football players?

Im almost positive they use a digital transmission so they cant be
monitored by anyone (like the defense of the other team) so i wouldnt
spend much time searching for the frequency.

Having moved to NJ from upstate NY years ago we don't see too many Buffalo
games. I was somewhat excited the Buffalo game was on Sunday. What a
disappointment!

It is a secure link to the spotters in the press box.

I don't believe the quarterback is allowed to be in direct contact
with the coaching staff via radio. That's why the coach signals from
the side lines, or sends in the play with a player.

If you do not see a rubber ducky antenna on one side of the headphones
or a cable leading down to a handie-talkie some place on their person then look
for a long cable following the coach around, the headsets may be "Hard Wired" to
a team intercom-inter headset system.
Will the stadium security allow a police scanner in the stands? If they do
try a search
from 460 Mhz to 470 Mhz for their communications! Out in the parking lot is
another good
place to try a search before and after the game.
Try this site for frequency info http://www.fordyce.org/scanning/
